NatMad – Exploring the Science of Bacteria, Taste, and Fermentation in Cooking

NatMad – Science & Food. SALON: Bacteria: taste and fermentation. Tuesday 12 December 2023 at 16:30-18:00.

Come and take part in a culinary journey where we explore scientific concepts in cooking together with professor of microbiology and fermentation at the University of Copenhagen, Dennis Sandris and project manager and brewer from Lsk, Caroline Twile.

In this NatMad – Natural Science & Food salon, we delve into the world of bacteria and explore their defining role in fermentation. We will also discover how these microorganisms affect the taste of the dishes we prepare in the kitchen.

Two experts will guide us
Dennis Sandris will share his great insight into the importance of bacteria in the kitchen and explain how they affect the taste experience through fermentation. Caroline Twile will enrich us with her knowledge and experience in fermentation, including her work with kombucha at LSK. Finally, we will give practical tips on how we can implement this knowledge and experience in the school kitchen.

About the project

NatMad – Naturvidenskab & Food aims to promote the understanding of the role of natural science in cooking through salons that focus on the gastronomic and physical elements. Practical

Although the salon is primarily aimed at teachers and student teachers, all food enthusiasts are welcome to this event. You can also watch when we live stream on Tuesday 12 December 2023 from 4:40 p.m. Join us on a tasty and enlightening journey into the science behind the magic of cooking.
