When I was thinking of making a gorgeous, sweet and sour liquor that would color such a winter night, I came across raspberries from Yamatsuri, Fukushima Prefecture (Green Roots). We challenged to deliver the sweet and sour taste that was shocked by eating locally as sake.

Started brewing with “Raspberry Hanamoto”, which is made by adding raspberries to “Hanamoto”, a manufacturing method that uses hops that are handed down in the Tohoku region. We also mix beer technique dry hops to make the delicate aroma of raspberries swell. The beer style “Sour Ale”, which is characterized by its acidity, was used as a reference when brewing. Aiming to express sour ale in the taste of sake, we also used abundant white jiuqu, which produces a lot of citric acid.
