The cutest baseball cupcakes to make every game day

We live on Long Island and baseball is very popular here so I’m sharing a cute way to make cupcakes that look like a baseball. And it doesn’t matter which team you root for, because baseballs look alike and the recipe is easy to make with a cake mix and a simple topping.

However, the best part of the cupcake should be the red stripes. Soft and delicious and a lot of fun to make with the kids. As it is the start of summer, they would also be perfect to accompany a glass of raspberry honey iced tea.

Ingredients

  • 1chocolate cake mix box
  • 3large eggs
  • 1 taxwhole milk
  • ½ Coupeunsalted butter, softened

Soft icing:

  • 1 taxunsalted butter, softened
  • 2 cupspowdered sugar, mixed with a whisk to break up any lumps
  • 1 teaspoonvanilla extract
  • ¼ teaspoonfine sea salt or kosher
  • 3 tbspheavy cream, more if needed
  • 3 drops or more if neededgreen food coloring or gel, leaf green or dark green work well

Fondant filling:

  • 1 boxwhite vanilla fondant
  • 1 tubered cookie frosting
  • 1 taxpowdered sugar for cutting board
  • 1disposable piping bag, fitted with a number 2 tip
  • 13 inch round cookie cutter / fondant

  1. Preheat the oven to 350 degrees.

  2. Line two cupcake pans with cupcake liners (I used red)

  3. Using a stand mixer, combine all the cupcake ingredients and beat on medium speed until combined, smooth and frothy.

  4. Pour the batter into the cupcake molds on ¾ full

  6. Sprinkle powdered sugar on a cutting board, spread the fondant in ½ inch thickness

  7. Use the cutter and cut 22 circles

  8. Squeeze cookie frosting into piping bag

  9. Draw the lines of the baseball onto the piece of fondant

  10. Let dry while you finish the cupcakes

Icing:

  1. Using a stand mixer, beat all ingredients on medium to high speed until creamy, fluffy and firm with peaks.

  2. Using the angled spatula, spread it lightly to cover the entire top of the cupcake

  4. Carefully place the piece of baseball fondant in the center of the frosting

  5. Repeat the steps with the remaining icing and enjoy!
